Nestled on the south-western slopes of the Paarl mountain range which lies 60 kilometres from Cape Town, the Fairview has 320 hectares of charming farmland of which 120 hectares are planted to vineyard. The estate, which slopes from 180 metres on the valley floor to an elevation of 400 metres, has been producing wine since 1699, with cheese production dating back to only 1980. Its iconic goat tower has a spiral wooden staircase which farm goats enjoy climbing. 70% of the winery's production is red wine of various varieties such as Shiraz, Pinotage, Mourvedre, Cabernet Sauvignon, Merlot, Tannat, Petite Sirah, Pinotage Viognier, Sweet Red, Solitude Shiraz, The Beacon Shiraz, Jakkalsfontein Shiraz, Pegleg Carignan, Primo Pinotage, and Cyril Back. White wines include Sauvignon Blanc, Riesling, Chardonnay, Viognier, Oom Pagel Semillon and Viognier Special Late Harvest.
