The Cantillon Brewery is the last traditional gueuze / lambic brewery in Brussels which uses wild atmospheric yeast for fermentation. The lambics and gueuzes have no added sweetners, with only natural fruits used creating a distinctly sour drink. Tour the Brussels Gueuze Museum to learn about the process used for the production of lambics, after which you can sample some of the hearty brews.
