The Sydney Fish Market on the Blackwattle Bay coast is the 3rd largest fish market in the world, after Tokyo's Tsukiji fish market, and La Nueva Viga Market in Mexico City. It has the entire supply chain set up around the fishing port, from trawlers at the docks to wholesale fish market, fresh seafood retail market, a delicatessen, a sushi bar, and a seafood cooking school. While shops open at 7 AM every day, wholesale Dutch auctions begin at 5.30 AM when about 160 seafood buyers arrive to check the day's catch which is around 2700 crates (52 tonnes) per day. Behind the Scenes tours introduce visitors to the market, the auction system, and the over 100 species available for purchase.
